Salads don’t have to be lettuce-based, nor do they need 20 ingredients. Easy examples include:
• Jicama, red onion 
  and pink grapefruit segments gently tossed with a little lime juice and cayenne 
  pepper.
  • Spinach, chick peas, artichoke hearts, pitted olives, capers and feta 
  cheese make a delicious Greek-style salad. Add grilled chicken and you’ve 
  got a whole meal.
  • If you’re more in the mood for Italian, try a caprese salad of 
  baby tomatoes, basil leaves and tiny balls of mozzarella tossed with extra virgin 
  olive oil and balsamic vinegar.
