Chicken with Roasted Pepper Relish

1 teaspoon balsamic or red wine vinegar

1 package Foster Farms Breast Fillets
2 teaspoons paprika

Roasted Pepper Relish:
4 teaspoons vegetable oil, divided
1/2 cup chopped onion
1 jar (9.25 oz.) roasted red bell peppers, drained and chopped
1/2 cup cooked corn, drained
1/4 teaspoon ground black pepper
1 clove garlic, finely chopped
1 tablespoon chopped fresh basil or cilantro

1. Toss chicken and paprika; set aside. In large nonstick skillet, heat 2 teaspoons oil over medium heat. 2. Add onion; cook 5 minutes, stirring occasionally. Add roasted peppers, corn, pepper and garlic; simmer 4 minutes, stirring frequently. Stir in basil and vinegar. Remove bowl and set aside. 3. In same skillet, heat remaining 2 teaspoons oil over medium heat. Cook chicken 6 to 8 minutes on each side or until no longer pink inside. 4. Serve chicken with pepper relish. Salt to taste.
