1 pound Foster Farms Boneless Skinless Chicken Breast Fillets
1 1/2 tablespoons olive oil
1 medium white onion, thinly sliced
7 cloves garlic, thinly sliced
2 jalapeno peppers, thinly sliced and seeded
1 small tomato, seeded and chopped
5 cups low-sodium chicken broth
3/4 cup orzo (rice shaped pasta)
1/4 cup fresh lime juice
1 small carrot, julianned very small
1/8 cup chopped fresh cilantro
fresh cilantro sprigs and lime sliced for garnish
salt and pepper to taste
1. Cook orzo in pot of boiling salted water until just tender. Drain well.
2. Heat oil in large saucepan over medium heat. Add garlic, jalapenos and onions. Saute until onion begins to brown, about 3 to 4 minutes.
3. Add chicken and saute 1 minute. Add broth, lime juice and tomato. Simmer until chicken is cooked through, about 3 minutes.
4. Mix in orzo, then chopped cilantro. Season soup with salt and pepper. Garnish with cilantro leaves and sprigs, and a lime twist.
