Chicken with Cilantro

Chicken:
1 package Foster Farms Boneless Skinless Chicken Breast Fillets, pounded
1 can whole green chiles (at least 4 chiles)
4 oz. goat cheese
12 to 16 sprigs fresh cilantro
5  toothpicks
  

Sauce:
2 tablespoons olive oil
5 tablespoons red wine vinegar
2/3 cup chopped fresh cilantro
6 large garlic cloves, peeled
2 teaspoons butter
1 teaspoon flour
  salt and pepper to taste


Directions
1. Wash pounded chicken breasts and pat dry. Take 1 green chile pepper and stuff with 1 oz. goat cheese and 1 or 2 sprigs of cilantro. Wrap chicken breasts around stuffed peppers and pin chicken rolls with toothpicks. Place in baking dish. Bake 30 minutes at 350 degrees. 2. Meanwhile, in blender combine oil, vinegar, chopped cilantro and garlic until smooth. 3. In a small saucepan melt butter over medium heat and add flour, stirring with a wooden spoon until it cooks into a roux. Gradually add cilantro mixture to pan and cook until slightly thickened, and salt and pepper to taste. 4. Remove toothpicks from chicken and pour cilantro sauce over. Bake an additional 15 to 20 minutes at 350 degrees. Garnish with additional cilantro.
