Stir-Fried Chicken and Broccoli
Enjoy this quick and easy stir-fry recipe using fresh Foster Farms chicken and Vitamin-C rich broccoli. Also can be served over whole wheat pasta or Jasmine rice. Prep Time: approx.
   10 Minutes. Cook Time: approx. 15 Minutes. Ready in: approx. 25 minutes .

Chicken:
5  Foster Farms Boneless Skinless Chicken Thighs
1/4 teaspoon ground ginger
1/4 teaspoon pepper
3 tablespoons peanut oil
  

Vegetable Mixture:
1 bunch fresh broccoli, sliced thin, crosswise
1 cup sliced green onion, white and green parts included
3/4 cup plus 2 tablespoons chicken broth, divided
1 teaspoon salt
1/2 teaspoon sugar
1 tablespoon cornstarch
  

Top With:
1/4 cup grated Parmesan cheese
  whole wheat croutons (optional)


Directions
1. Chop chicken into bite-size pieces. Sprinkle ginger and pepper over chicken. In large frying pan or wok, pour oil and heat to high temperature. Add chicken and stir-fry 3 minutes or until brown. Push chicken to side and add broccoli and onion. Stir-fry 3 minutes more.

2. Mix together 3/4 cup broth, salt and sugar and stir into frying pan. Reduce heat to medium high. Cover and cook 2 minutes. Add cornstarch and remaining 2 tablespoons chicken broth and stir until smooth. Stir into frying pan and cook for 1 minute. Remove from heat.

3. Stir in Parmesan cheese; sprinkle with whole wheat croutons. Serve immediately.
