Casbah Cornish Hens
These game hens are a great dish for company. The bacon, tomato, and feta cheese, combined with the couscous stuffing, make this dish fabulous! Prep Time: approx.
   20 Minutes. Cook Time: approx. 55 Minutes. Ready in: approx. 75 minutes .

Cornish:
1  Foster Farms Cornish Game Hen Twin Pack (2 hens)
  

Stuffing:
4 slices bacon, divided
1/2 cup chopped leeks or green onions
1 clove garlic, finely chopped
3/4 cup low-sodium chicken broth
1/2 cup couscous
2 tablespoons sliced sundried tomatoes, packed in oil and drained
2 tablespoon crumbled feta cheese
2 teaspoons fresh basil, chopped


Directions
1. Preheat oven to 350 degrees. Rinse hens and pat dry.

2. Chop 2 bacon slices. In medium saucepan, over medium heat, cook chopped bacon and leeks for 5 minutes, until bacon is cooked and leeks are tender, stirring frequently. Stir in garlic. Add broth and bring to a boil over high heat. Stir in tomatoes, cheese, and basil. Season to taste with salt and pepper.

3. Stuff hens loosely with couscous mixture. Tie legs together and tuck wings back. Place hens in roasting pan.

4. Cut remaining 2 bacon slices in half, then place over the hens. Roast 45 to 55 minutes or until hens are no longer pink when cut into.
