Cornish Hens Cacciatore
The light sauce on this Cornish Cacciatore recipe gives it plenty of flavor without being overpowering. Serve with warm french bread and enjoy! Prep Time: approx.

Cornish:
1  Foster Farms Cornish Game Hen Twin Pack (2 hens)
  salt and pepper
2 tablespoons olive oil or other cooking oil
  

Sauce:
1 medium green pepper, seeded and cut into strips
3 cloves garlic, pressed or 3/8 teaspoon garlic powder
1 can (14 1/2 to 16 oz.) whole peeled tomatoes, undrained
2 teaspoons italian herb seasoning
2 cup fresh parsley, chopped
1/2 cup dry white wine


Directions
1. Rinse hens and pat dry. Cut hens into quarters, season lightly with salt and pepper.

2. Heat oil in large frying pan, add cornish pieces and brown on all sides. Remove cornish, reduce heat and add onion, green pepper and garlic to frying pan. Cook until vegetables are soft but not browned.

3. Return cornish to pan and add remaining ingredients. Simmer uncovered for 25 to 30 minutes.
