Cornish Hens with Oyster Stuffing

Cornish:
1  Foster Farms Cornish Game Hen Twin Pack (2 hens)
  

Oyster Stuffing:
1 1/3 cup oysters, drained and coarsely chopped (reserve liquid)
1 cup bread stuffing mix
1/4 teaspoon dry sage
1/8 teaspoon pepper
1/8 teaspoon ground thyme
2 tablespoons celery, diced
2 tablespoons onion, chopped
3 tablespoons oyster liquor, water or broth
1  egg
3 tablespoons melted butter or margarine, divided
  salt and pepper


Directions
1. Rinse hens and pat dry. In a bowl, combine oysters, stuffing mix, sage, pepper, thyme, celery, and onion.

2. In separate bowl, combine oyster liquor, water or broth, egg and 1 tablespoon melted butter or margarine and mix well. Pour over stuffing, stirring until liquid is absorbed.

3. Stuff each hen, tie legs together and tuck wings behind back. Place in a shallow baking pan, season lightly with salt and pepper, brush with remaining 1 tablespoon melted butter or margarine.

4. Roast at 400 degrees for 45 to 50 minutes.
