Chicken Broccoli Manicotti

Chicken:
1 package Foster Farms Ground Chicken
2 teaspoons vegetable oil
1/4 cup chopped onion
1 cup chopped mushrooms
1 cup chopped broccoli
2 cloves garlic, finely chopped
1/2 teaspoon dried basil
  

Stuffing:
1/2 cup shredded Mozzarella cheese
1/3 cup low fat ricotta cheese
1  egg
12 to 14  cooked manicotti or large shell pasta
1 container (15 oz.) marinara sauce
2 tablespoons grated Parmesan cheese


Directions
1. Heat oven to 350 degrees. Spray a rectangular baking pan with non-stick cooking spray.

2. In a large skillet over medium heat, in hot oil, cook chicken, onion, mushrooms, broccoli and garlic until chicken is no longer pink, stirring constantly.

3. Remove from heat and drain. Stir in basil, egg and cheeses. Salt and pepper to taste.

4. Fill pasta with about 1/3 cup chicken mixture. Place stuffed pasta in bakin pan. Top with marinara sauce and sprinkle with Parmesan cheese.

5. Bake about 15 minutes or until mixture is heated through.
