Turkey Gumbo
This is a great recipe for left over Foster Farms Turkey. It's best over rice and can be made the night before (it tastes even better!). Prep Time: approx.
   30 Minutes. Cook Time: approx. 120 Minutes. Ready in: approx. 150 minutes .
   Makes servings.

1 pound Foster Farms Mild Italian Turkey Sausage, sliced in approximately ½” pieces
6 cups water
1 cup corn oil
1 cup flour
1/2 cup diced green bell pepper
1 cup diced yellow onion
1 cup diced celery
1 cup chicken or turkey broth
1/2 cup chopped parsely
1/2 cup chopped green onion
1 tablespoon chopped garlice
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon cayenne pepper
2  bay leaves
  filé powder to taste
  shredded leftover turkey (however much you want!)

Directions
1. Start by making a roux in a large pot (cast-iron is best). Over medium heat combine corn oil and flour, stir continuously for 20 to 25 minutes until roux take on a caramel color.

2. Stir in peppers, onions, garlic, and celery and continue stirring for 5 minutes. Add in sausage, salt, and cayenne and stir until sausage begins to firm up. Add water, broth, shredded Turkey leftovers, bay leaves, Worcestershire sauce, and parsley.

3. Stir together making sure to combine roux mixture and water, bring to a boil and then simmer uncovered for 2 hours. Skim off any fat and add onions. Serve over long grain rice and add file powder to taste.
