										Turkey Bruschetta 
										These delicious fresh Foster Farms turkey breast cutlets are covered in a tomato-onion-pesto sauce.  Serve with warm french bread and enjoy!

		   Tomato Mixture: 
            
            2 medium tomatoes, seeded and chopped 
            
            2  green onions, thinly sliced 
            
            3 tablespoons pesto 
            
               Egg and Breadcrumb Mixture: 
            
            3 tablespoons milk 
            
            1  egg, lightly beaten 
            
            1/3 cup seasoned dry breadcrumbs 
            
            1/3 cup grated Parmesan cheese 
            
               Turkey: 
            
            1 package Foster Farms Turkey Breast Cutlets 
            
            3 tablespoons shredded Parmesan cheese

Directions 
		1.  In a medium bowl, combine tomatoes, onions and pesto and set aside. 
  
2.  Heat oven to 400 degrees.
  
3.  In a medium bowl, whisk together milk and egg.
  
4.  In a shallow pan, combine breadcrumbs and grated cheese.
  
5.  Spray a rectangular baking pan with non-stick cooking spray.
  
6.  Dip turkey cutlets in egg mixture, then breadcrumb mixture, coating both sides.  Place cutlets in a single layer on baking pan.
  
7.  Bake 8 to 10 minutes or until turkey is no longer pink inside and coating is golden brown.
  
8.  Top each cutlet with about 3 tablespoons tomato mixture.  Sprinkle with shredded Parmesan cheese.  Heat 3 minutes or until cheese melts.
