Tex Mex Turkey Chili
This tex mex dish uses fresh turkey thigh meat, fresh vegetables, and a number of spices. Enjoy this Mexican inspired chili with homemade cornbread. Prep Time: approx.
   25 Minutes. Cook Time: approx. 120 Minutes. Ready in: approx. 145 minutes .

Seasonings:
3 cloves garlic, minced
2  onions, chopped
2  celery stalks, chopped
1  green pepper, seeded and chopped
1 can (14 oz.) single strength beef broth
1 can (10 oz.) whole tomatoes
1 can (6 oz.) tomato paste
1 can (4 oz.) diced green chiles
6 tablespoons chili powder, hot or mild to taste
2 tablespoons Worcestershire sauce
2 teaspoons ground cumin
1 teaspoon ground oregano
1/2 ounce unsweetened chocolate (1/2 square)
  salt to taste
  

Turkey:
2 packages Foster Farms Turkey Thighs
2 to 3 tablespoons oil


Directions
1. Remove skin from turkey thighs and cut meat from bone. Cut thigh meat into 1/4" to 1/2" cubes, or coarsely grind.

2. In a 5-quart kettle, brown one half of the turkey at a time in hot oil. Remove meat from pan.

3. Saute garlic, onion, celery and green pepper until soft but not browned. Stir in all remaining ingredients and browned turkey meat.

4. Cover and simmer for 1 1/2 to 2 hours, or until turkey is tender and shreds easily.
