Southwestern Chicken
Using the Best of Our Fryer package, you can create a delicious, Southwestern-inspired dish everyone is sure to love. Prep Time: approx.
   20 Minutes. Cook Time: approx. 50 Minutes. Ready in: approx. 70 minutes .

2 tablespoons vegetable oil
1 medium onion, thinly sliced
2 cloves garlic, finely chopped
1 can (15 oz.) red beans, rinsed and drained
1 can (14.5 oz.) diced tomatoes
1 can (4 oz.) diced green chilies, drained
2 teaspoons chili powder
1/4 teaspoon oregano
1/4 teaspoon salt
1/4 teaspoon red pepper sauce
1/2 cup shredded pepper jack cheese
  

Chicken:
1 package (about 2 1/2 lbs.) Foster Farms Best of Our Fryer
  

Southwestern Sauce:


Directions
1. Heat oven to 375 degrees. Spray a rectangular baking pan with non-stick cooking spray.

2. Rinse chicken and pat dry. Place chicken, skin side down, in pan. Bake chicken 30 minutes.

3. In medium saucepan, in hot oil, cook onion and garlic until tender. Stir in remaining ingredients except cheese. Cook over medium heat until mixture is hot. Remove chicken from oven and spoon excess liquid from chicken.

4. Turn chicken over. Pour mixture from saucepan over chicken. Cover and bake 20 minutes longer or until chicken is no longer pink when cut into. Sprinkle with cheese.
