Chicken and Dumplings

Chicken:
1 package Foster Farms Whole Cut-up Chicken
2 tablespoons oil
1 package (10 oz.) frozen small white onions or 8 boiling onions, halved
6 medium carrots, thickly sliced
2  celery stalks, sliced
1/2 pound fresh mushrooms, halved
1 teaspoon dried thyme leaves
2 cans (14 1/2 oz.) chicken broth
1/2 cup white wine
  salt and pepper to taste
  

Sour Cream Dumplings:
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons fresh parsley, chopped
3/4 cup sour cream
2/3 cup milk
1  egg


Directions
1. Cut breast in half, remove back and giblets, and reserve for another use. 2. Heat oil in a 6-quart pan. Add chicken, a few pieces at a time, and brown on all sides. 3. Add onions, carrots, celery, mushrooms, thyme, broth and wine to pan with chicken pieces. Bring to a boil, then reduce heat, cover and simmer 15 minutes. 4. Skim fat from broth, season to taste with salt and pepper. Drop dumpling dough by tablespoon onto simmering broth. Cover and cook 20 minutes without lifting cover. 5. To make dumplings: In a medium bowl sift together flour, baking powder and salt. Stir in parsley. In separate bowl, combine sour cream, milk and egg. Add sour cream mixture all at once to dry ingredients. Stir until thoroughtly moistened.
