Miso Chicken Skewers

1 package Foster Farms Boneless Skinless Breast Fillets
  

Miso Marinade
1/2 cup Japanese miso salad dressing (found in Asian or natural foods aisle)
1/4 cup pickled ginger, chopped
2 teaspoons Chinese hot mustard
1 teaspoons salt
  

Dipping Sauce
1/4 cup light soy sauce
1/4 cup mirin
1/4 cup green onions, sliced thinly
  

Other
12-15  bamboo skewers or metal skewers


Directions
1. If using bamboo skewers, soak in cold water for at least 1 hour or overnight.

2. Rinse chicken in cold water and pat dry. Cut chicken into 1 inch wide strips. Marinate chicken in miso dressing, ginger, mustard and salt for 1 hour. Skewer chicken pieces onto top half of skewers. Discard chicken marinade.

3. Combine Kikkoman soy, mirin and green onions.

4. Once grill is hot, reduce heat by 1/3, lightly oil grates with vegetable oil. Place chicken skewers on grill across the grates. Cook for 3-5 minutes, turn chicken over and cook for 2-3 more minutes or until cooked through. Remove and serve with dipping sauce and pickled ginger.
