Calypso Caribbean Chicken Breasts

1 package Foster Farms Fresh & Easy Boneless Skinless Breast Fillets
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
  

Glaze
1/4 cup jalapeno jelly, melted
1/2 teaspoon ginger root, minced
1 tablespoon lime juice
  

Salsa
1  banana, cut into chunks
1 cup pineapple chunks
1 cup papaya or mango, diced
1 tablespoon green onion, minced
1 tablespoon cilantro, snipped
2 tablespoons red bell pepper, diced
2 tablespoons crystallized ginger, minced
1 clove garlic, crushed
  crushed coconut


Directions
1.Combine the ingredients for the rub and coat the fillets with the mixture. Combine the ingredients for the glaze in a small bowl; mix well.

2. Put 1 tablespoon of the glaze in a bowl along with the ingredients for the salsa. Place the salsa on a platter.

3. Place the fillets on an oiled broiler rack. Broil 6 inches from the heat source for 3 minutes per side.

4. Brush 1 side of each fillet with the glaze and broil 1 minute; turn. Brush the other side with glaze and broil 1 minute more or till the fillets test done. Arrange the fillets on top of the salsa and garnish with the coconut.
