Italian Chicken Rollups
. Prep Time: approx.  30 Minutes. Cook Time: approx. 45 Minutes. Ready in: approx. 75 minutes .
Makes servings.

1 teaspoon dried basil, crumbled
1 package (about 1 lb) Fresh Foster Farms Thin-Sliced Boneless & Skinless Breast Fillets
1 1/2 cups water
8 oz. can tomato paste
1 medium garlic clove, minced or 1/2 teaspoon bottled minced garlic
3/4 teaspoon dried marjoram, crumbled
6 oz. (about 1/2 cup) low fat or fat free cottage cheese, drained
4 oz. (about 1/2 cup) grated low fat or fat free mozzarella cheese
1 teaspoon dried oregano, crumbled

1. Preheat oven to 350 degrees. In a small saucepan, whisk together water, tomato paste, and garlic. 2. In a small bowl, combine oregano, basil, marjoram, and pepper. Add 3/4 of mixture to pan. Bring to boil over medium-high heat. Reduce heat and simmer for 10 minutes, stirring occasionally. 3. In a small bowl, combine remaining herb mixture with cottage cheese. Leaving a 1/2-inch edge all around, spoon mixture onto chicken. From narrow end, roll each breast jell-roll style. 4. Spoon half of the tomato sauce into a 10x6x2-inch baking dish. Arrange chicken rolls with seam side down on sauce. Spoon remaining tomato sauce over chicken rolls, then sprinkle with mozzarella. Bake for 45 minutes, or until chicken is no longer pink in the center.
