Italian Skewers with 3 Pepper Relish
. Prep Time: approx. 10 Minutes. Cook Time: approx. 20 Minutes. Ready in: approx. 30 minutes .
Makes servings.
Skewers:

1 package (about 1 1/2 lbs.) Foster Farms Boneless Skinless Tenders
|
2 zucchinis, cut into 1-inch slices
|
8 medium mushrooms
|
2 small onions, quartered
|
1/3 cup reduced calorie Italian dressing
|
Relish:
|
2 teaspoons olive oil
|
1 red bell pepper, cored and finely chopped
|
1 green bell pepper, cored and finely chopped
|
2 garlic cloves, finely chopped
|
1/8 teaspoon ground pepper
|
2 tablespoons reduced calorie Italian dressing
|
2 tablespoons plain yogurt
|
1 tablespoon capers
|
salt to taste

Directions
1. Rinse chicken; pat dry. On 4 skewers, alternate chicken, zucchini, mushrooms, and onions. Brush with Italian dressing. Marinate until cooking time.
2. Set oven control to broil or prepare coals. Broil or grill skewers, 4 to 6 inches from heat, 5 to 7 minutes on each side, brushing frequently with dressing.
3. In medium skillet, in hot oil, stir-fry peppers and garlic. Remove from heat, stir in ground pepper, dressing, yogurt, and capers. Salt to taste. Serve relish warm or cold with skewers.
