Milwaukee Chicken

1  Foster Farms Roaster
1 teaspoon vegetable oil
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried thyme leaves, divided
8 oz. sliced fresh mushrooms
2 medium onions, peeled and cut in eighths
4  bacon slices, chopped
1 can (14.5 oz.) diced tomatoes, drained
1 bottle (12 oz.) beer
1 cup low-sodium chicken broth
1 tablespoon packed brown sugar
1 teaspoon caraway
2  garlic cloves, finely chopped
  salt and pepper, to taste
 

Directions
1. Heat oven to 350 degrees. Remove giblets. Rinse chicken and pat dry. Place chicken in roasting pan. Brush with oil and sprinkle with paprika, salt and pepper. Sprinkle 1/4 teaspoon thyme in cavity. 2. Place mushrooms, onions, bacon, and tomatoes around chicken. 3. In medium bowl, mix beer, broth, sugar, caraway, 1/4 teaspoon thyme, and garlic. Pour mixture around chicken. 4. Roast, uncovered, 60 to 90 minutes or until chicken juices run clear, baste every 20 minutes with juices. Let stand 10 minutes before carving. Spoon off excess fat from sauce. Season to taste with salt and pepper. Serve sauce with chicken.
