South Seas Chicken and Spinach Salad
Using fresh Foster Farms chicken, this salad recipe is sure to be a crowd pleaser. The unique toppings add not only crunch, but great flavor!. Prep Time: approx.  15 Minutes. Cook Time: approx. 5 Minutes. Ready in: approx. 20 minutes .
Makes servings.


  

Chicken:

1 pound Foster Farms Chicken Breast Tenders
  salt and pepper to taste
1 teaspoon minced garlic
  

Dressing:

1/4 cup mild olive oil
1 tablespoon toasted sesame oil
1 tablespoon sweet and sour sauce
3 tablespoons seasoned rice vinegar
2 teaspoons grated peeled ginger
  

Salad:

8 cups baby spinach, rinsed and spun dry
1/4 cup chopped honey roasted peanuts
1/3 cup chopped celery
1/4 cup chopped red onion
1/3 cup diced peeled fresh mango
 

Directions
1. Whisk together all but 1 tablespoon of olive oil, sesame oil, sweet and sour sauce, vinegar and ginger. Set aside.

2. Season chicken tenders with salt and pepper. Heat remaining oil in a large non-stick wok or skillet over medium-high heat. Stir-fry until chicken is cooked through, during the last minute of cooking add the garlic. Transfer to cutting surface to cool and let rest.

3. Meanwhile place 2 cups spinach onto each of 4 plates and top each with equal amounts of peanuts, celery, onion and mango. Cut chicken into 1 1/2-inch thin strips, then lay on top of each salad and drizzle with the prepared dressing.
