Simple Summer Soup
Kick off the summer with this quick and easy summer soup recipe using fresh Foster Farms chicken. Pair it with a side salad and you have the perfect meal for a warm summer evening.. Prep Time: approx.  10 Minutes. Cook Time: approx. 15 Minutes. Ready in: approx. 25 minutes .

Chicken:

1 package Foster Farms Boneless Skinless Thighs
1 teaspoon vegetable oil
  

Vegetable Mixture:

1/2 cup chopped onion
1/4 pound fresh mushrooms, sliced
7 cups chicken broth, homemade or purchased
2 cups frozen peas with sliced carrots
1/2 cup dry white wine
1/4 cup fresh lemon juice
1/2 teaspoon grated lemon peel
1/2 teaspoon dried thyme leaves
1/8 teaspoon black pepper

Directions
1. Cut chicken into 1/2-inch cubes. Add oil to a 3 1/2-quart saucepan with non-stick finish. Heat pan over medium-high heat until a few drops of water sprinkled on surface sizzle.

2. Add chicken and saute, stirring frequently, until pieces are no longer pink, about 5 minutes. Add onion and mushrooms to pan, saute 2 to 3 minutes. Add remaining ingredients.

3. Bring soup to a boil, reduce heat and simmer until vegetables are heated through, about 5 minutes.
