Apple Pecan Chicken
Using Foster Farms skinless chicken breast halves, this recipe combines the savory tastes of baked apples and pecans with a delicious dressing. A great way to get your apple a day!. Prep Time: approx.  20 Minutes. Cook Time: approx. 35 Minutes. Ready in: approx. 55 minutes .

Chicken:

3  Foster Farms Skinless Chicken Half Breasts
1/2 cup all-purpose flour
2 teaspoons olive oil
  

Apple-Pecan Topping:

2  apples, peeled, cored and sliced
1/4 cup chopped pecans
  

Dressing:

1 cup apple juice
3 tablespoons cider vinegar
2 tablespoons brown sugar
1/4 teaspoon cinnamon
1 tablespoon cornstarch dissolved in 1 tablespoon cold water

Directions
1. Heat oven to 375 degrees. Rinse chicken and pat dry. Coat chicken with flour and shake off excess. In large skillet, in hot oil, brown chicken on all sides.

2. Spray rectangular baking pan with nonstick cooking spray. Place chicken in pan. Sprinkle with apples and pecans.

3. Mix apple juice, vinegar, brown sugar, and cinnamon, and pour over apples.(

) 4. Cover and bake about 35 minutes or until chicken is no longer pink when cut into. Place chicken and apples on serving platter and keep warm.

5. In small saucepan, combine juices and cornstarch mixture. Heat to boiling, stirring constantly. Reduce heat and simmer until thickened. Serve sauce over chicken.
