Holiday Cornish with Cranberry Stuffing
These Cornish Hens with Cranberry Stuffing complete the holidays! Perfect to serve on special occasions with friends and family.. Prep Time: approx.  15 Minutes. Cook Time: approx. 50 Minutes. Ready in: approx. 65 minutes .

Chicken:

1  Foster Farms Cornish Game Hen Twin Pack (2 hens)
  

Stuffing:

1/3 cup chopped cranberries, fresh or frozen
1 tablespoon sugar
2 1/2 teaspoons grated orange peel
1/4 teaspoon salt
1/8 teaspoon ground cinnamon
1 1/2 cups raisin bread cubes (about 3 slices)
  

Liquid Mixture:

3 tablespoons melted butter or margarine
1  egg
1 tablespoon orange juice
  

Season With:

  salt and pepper

Directions
1. Rinse hens and pat dry.

2. In small bowl, combine cranberries, sugar, 1 teaspoon orange peel, salt, cinnamon and raisin bread cubes.

3. In a separate bowl, combine 1 tablespoon melted butter or margarine, egg and orange juice. Beat well and pour over stuffing. Stir stuffing lightly until liquid is absorbed.

4. Stuff hens, tie legs together and tuck wings behind back of each bird. Season hens lightly with salt and pepper. Place hens in a shallow baking pan.

5. Combine remaining 2 tablespoons melted butter or margarine with remaining 2 teaspoons orange peel and brush mixture over hens.

6. Bake at 400 degrees for 45 to 50 minutes.
