2 tablespoons vegetable oil

1 tablespoon ground cumin
1/4 tablespoon pepper
1 large onion, diced

4 large garlic cloves, minced
1 can (28 ounces) crushed tomatoes in heavy puree
2 cans (8 ounces) tomato sauce
3/4 cup cold water
2 cans (15 ounces) pinto or kidney beans, drained and rinsed
3 pasilla, Anaheim peppers, or 1 green bell pepper, seeded and diced
3/4 cup tightly packed cilantro, chopped (optional)
3 tablespoons fresh lime juice (optional)
Directions
1. In a 6-quart saucepan, heat the oil over medium-high heat. Add turkey; season with chili powder, cumin and the salt and pepper. Use a wooden spoon to break turkey into bits. Cook, stirring occasionally, until turkey is no longer pink, about 5 minutes.
2. Stir in onion and garlic; cook, stirring frequently, until onion is tender, about 5 minutes. Add tomatoes, tomato sauce, and the water; bring to a boil. Cover and reduce heat to low; simmer 20 minutes, stirring occasionally.
3. Add beans and peppers; bring to a boil. Reduce heat to low; cover and simmer 15 minutes, stirring occasionally. Stir in cilantro and lime juice.
Note: Peppers can be spicy. For mild chili, use a bell pepper and reduce chili powder to ΒΌ cup. For a fiery chili, add cayenne pepper or diced jalapeno peppers, to taste. Use gloves when handling peppers to avoid burning skin.
