Chicken Satay
Fast, easy and wonderful chicken tenders on a skewer.. Prep Time: approx.  20 Minutes. Cook Time: approx. 10 Minutes. Ready in: approx. 30 minutes .
Makes servings.


  

Chicken:

2 packages (about 2 lbs.) Foster Farms Chicken Breast Tenders
1 tablespoon olive oil
  salt and pepper to taste
1 package bamboo skewers, soaked in water to prevent burning
  

Peanut Sauce:

1 cup chunky peanut butter
1/2 cup heavy whipping cream
1/2 cup water
1/4 cup chopped green onion
1/4 cup chopped fresh cilantro
1 teaspoon Asian style chili paste
  salt and pepper to taste
  

Cilantro Pesto:

1 cup extra virgin olive oil
1 cup chopped fresh cilantro
1/2 cup torn fresh basil leaves
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup chopped fresh Italian parsley
1/4 cup pine nuts

Directions
Chicken:
1. Preheat grill.

2. Place chicken, olive oil, and salt and pepper in a large resealable bag. Shake bag so that chicken is well coated.

3. Thread chicken onto skewers, one tender per skewer.

4. Grill chicken on medium-high heat until the chicken is cooked all the way through, approximately 5 minutes on each side.

Peanut Sauce:
1. Mix all ingredients together in a small pot on medium-high heat.

2. Stir constantly until ingredients begin to boil and remove from heat immediately.

3. Place in a small serving dish.

Cilantro Pesto:
1. Place all ingredients with the exception of the pine nuts into a blender and puree.

2. Place in a small serving dish and mix in pine nuts.

3. Serve chicken satays with the dipping sauces, and add a garnish of basil or cilantro for color.
