Fancy Mixed Greens Salad with Chicken
. Prep Time: approx.  10 Minutes. Cook Time: approx. 16 Minutes. Ready in: approx. 26 minutes .

Optional

1 can hearts of palm
1/2 cup feta cheese
1 bag (14-18oz) mixed greens
1 cup balsamic vinegar dressing
1  large tomato, sliced
1  large avacado, peeled, pitted and cut into one inch cubes
1  medium red onion, thinly sliced
1 jar (12 oz) marinated artichoke hearts, drained (optional)
1 package Foster Farms Savory Servings Lemon Herb Boneless Skinless Chicken Breast Fillets
 

Directions
1. Allow coals to burn down to the glowing stage (medium setting on gas grill). Place Foster Farms Lemon Herb marinated chicken breast fillets on the grill and cook for 6-8 minutes per side. Chicken is fully cooked when internal temperature reaches 170 degrees f. Remove cooked chicken breast fillets and slice into 1-inch strips.

2. If grilling with an electric grill hat has a top and bottom cooking surface (such as a George Foreman grill), place chicken onto grill and grill for 6-8 minutes until internal temperature reaches 170 degrees F.

3. In large bowl, toss mixed greens, tomato, avocado, red onion, artichoke, hearts of palm and feta cheese with balsamic vinegar dressing.

4. Divide salad into 4 portions (or 6 for smaller servings) and place on dinner plate. Top salad with slices of Lemon Herb Savory Servings breasts and serve immediately.
