2011 OREGON REGIONAL EVENT

On August 19, 2011 at Le Cordon Bleu College of Culinary Arts in Portland our five Oregon semifinalists competed for a chance to have their recipe move to the final stage of the 2nd Annual Foster Farms Fresh Chicken Cooking Contest. Only two of the five recipes would be selected as regional winners and move forward to compete at the final event.

The five semifinalists and their recipes were:

Pan-fried Chicken with Blueberry-Pinot Noir Sauce and Goat Cheese Polenta
Mary Lou Cook of Welches
Hazelnut-Sage Chicken with Ravioli
Megan Futrell of Hillsboro
Chicken and Mushroom Ragout
Russell Kool of Hillsboro
Crispy Basil Skinned Chicken Breast with Peach Pink Peppercorn Compote
Deb Stoner of Oak Grove
Stir-fried Chicken with Walla Walla Onions and Hood River Pears

Judges Katherine Miller, editor of The Oregonian's FOODday section and blog, Hayley Platt, co-host on KOIN Studio 6, Jennifer Heigl, managing editor of Daily Blender, and Lisa Schroeder, executive chef and owner of Mother's Bistro & Bar, selected Russell Kool's Crispy Basil Skinned Chicken Breast with Peach Pink Peppercorn Compote recipe and Timmy Baker's Pan-fried Chicken with Blueberry-Pinot Noir Sauce and Goat Cheese Polenta recipe as their top picks based on their recipes' use of fresh, local ingredients, including Foster Farms locally grown chicken. Judges made decisions based on taste, use of fresh, local ingredients, appearance/appeal, simplicity/ease of making and originality. Guests in attendance selected contestant Megan Futrell's Chicken and Mushroom Ragout recipe for the "People's Choice Award".

The two regional winners each received $1,000 and a trip to California’s Napa Valley to compete in the final event for a chance to win $10,000 and a one-year supply of Foster Farms fresh chicken!
