FINAL COMPETITION
The second annual Foster Farms Fresh Chicken Cooking Contest Final event was held on September 30, 2011 at
the Culinary Institute of America at Greystone, in California’s Napa Valley. Chosen from a pool of
nearly 2,000 recipes, six regional finalists competed for the grand prize of $10,000 and a one-year
supply of Foster Farms fresh chicken. The six finalists were selected at regional events held during
August in California, Oregon and Washington.
Each finalist personally prepared their delicious recipe featuring locally-grown Foster Farms fresh chicken and
other local ingredients.
The six regional finalists and their recipes were:

Pan-fried Chicken with Blueberry-Pinot Noir Sauce and Goat Cheese Polenta
Roxanne Chan of Albany, California
Asian Braised Chicken Thighs with Soybean Salad
Jennifer Daskevich of Los Angeles, California
Chicken and Quinoa with Figs, Spinach and Mint
Tina Hoban of Bellingham, Washington
Chicken with Cherry Tapenade over Creamy Pancetta Polenta
Russell Kool of Hillsboro, Oregon
Crispy Basil Skinned Chicken Breast with Peach Pink Peppercorn Compote
Rebecca Spence of Vancouver, Washington
Crispy Orange Chicken with Fennel, Avocado and Orange Salad
The finalists’ dishes were presented to an esteemed panel of food media judges including Liam Mayclem,
host and producer of CBS 5 TV’s Eye on The Bay; Carolyn Jung, Food Gal blogger and former San Jose
Mercury News food editor; Natalie Haughton, “Slow & Easy” cookbook author and food journalist; and
Narsai David, food and wine editor at San Francisco’s KCBS Radio. Rebecca Spence reigned supreme
for her Crispy Orange Chicken with Fennel, Avocado and Orange Salad. Judges selected her recipe
for use of local ingredients, taste and presentation.
Guests in attendance selected Jennifer Daskevich’s Chicken and Quinoa with Figs,
Spinach and Mint recipe for the “People’s Choice Award” for best use of local ingredients.
