Pkg of Foster Farms Drums or Thighs (4-6 pcs)
1/4 cup dijon mustard
1 Tbsp fresh rosemary chopped
1 Tbsp fresh thyme chopped
2 Tbsp garlic chopped
1 Tbsp lemon zest
1/2 tsp red pepper flakes
1/4 cup extra virgin olive oil
Salt & Pepper
Marinade:
In a mixing bowl, whisk olive oil into mustard until incorporated.
Add all other ingredients except salt and pepper. Chicken:
Rinse chicken in cold water and pat dry. Separate leg from thigh,
if desired, by cutting down between the joints. Coat chicken with
marinade and salt and pepper. Let stand for 30 minutes. To cook:
Start gas grill or charcoal BBQ. If using gas grill, turn one
side down to a low heat while keeping the other side on med/high.
If using charcoal grill, push coals to one side. Place chicken
pieces on the grill (away from the fire) skin side up. Cover and
cook for 20-25 minutes (check to make sure there are no flare
ups if using a gas grill). Turn chicken over onto direct heat,
cover and cook for 5 more minutes or until chicken is well browned,
and cooked through.
Serve with lemon wedges and a leafy salad.

Fun Tip:
Prevent burning by using indirect heat. Push coals to one side
of BBQ kettle - this way, the BBQ will retain heat but fat drippings
will not cause
grill to flare up.
