INGREDIENTS

  

Chicken:

2 packages (about 2 lbs.) Foster Farms Chicken Breast Tenders

32 slices pancetta

1 package large toothpicks, soaked in water to prevent burning

  

Red Pepper Dip:

1 jar (15 oz.) roasted red peppers

1/2 cup fresh basil leaves torn into pieces

1/2 cup heavy whipping cream

1 tablespoon honey

The sauce for this was very tasty and easy to make, but the chicken and pancetta were overcooked when we followed these instructions. If I make this recipe again, I will shorten the cooking time. The chicken was too dry, and the pancetta was tough.

DIRECTIONS

1. Preheat oven to 450 degrees.

2. In a blender, puree all ingredients for red pepper dip. Refrigerate until use.

3. Wrap chicken with pancetta and skewer with toothpicks to hold pancetta on chicken. Place on baking sheet.

4. Cook chicken and pancetta in oven until pancetta becomes crispy, about 30 minutes.

5. Serve chicken wraps and dip on a platter sprinkled with chopped green onions to give a confetti fun appearance.
