INGREDIENTS

3  Foster Farms Cornish Game Hens (allow 1/2 a hen per person)

  

Jamaican Basting Sauce:

1 piece fresh ginger, grated using metal grater

4  green onions, minced

4 large garlic cloves, minced

  zest of 1 orange, finely shredded and juice of 1/2 orange

  zest, finely shredded, and juice of 2 medium limes

1 tablespoon packed brown sugar

1 tablespoon soy sauce

1 teaspoon each of salt and pepper

3/4 teaspoon ground cinnamon

1/4 teaspoon ground cloves

3 tablespoons vegetable oil

DIRECTIONS

1. About 10 minutes ahead, preheat gas grill or about 1/2 hour ahead, light charcoal briquettes. Use poultry shears or knife to cut hens in half, cutting through breast and backbones. Arrange on a platter. Make basting sauce.

2. Jamaican Basting Sauce: In a small bowl, stir together ginger, onions, garlic, orange zest and juice, lime zest and juice, sugar, soy sauce, salt and pepper, cinnamon, and cloves. Add the oil; mix well. Let stand 10 minutes (or cover and refrigerate up to 2 days).

3. Grill hens, covered, over low to medium heat until golden brown, turning as needed to prevent burning. When hens are browned as desired, reduce temperature or transfer hens away from direct heat and finish cooking with indirect heat. Grill until no longer pink at the bone, about 40-45 minutes total. Baste a couple of times with Jamaican Basting Sauce during the first 25 minutes of grilling (stop basting at least 10 minutes before cooking time is up to avoid contaminating cooked chicken with raw chicken juices). Discard leftover basting sauces.
