DIRECTIONS

1. Save neck and giblets for stuffing or sandwich filling.

2. Sprinkle the inside of the turkey with salt and pepper. Place onion and celery in body cavity, skewer closed.

3. Tie legs to body. Skewer neck opening and tie wings flat against breast. Brush all over with butter.

4. Sprinkle with 2 teaspoons flour mixed with salt and pepper.

5. Roast at 325 degrees for 2 1/2 hours.

6. Combine orange juice concentrate and water; spoon over turkey.

7. Roast 1/2 hour longer, until turkey is done, basting every 10 minutes with pan liquid.

8. Skim fat from drippings. Blend 2 tablespoons flour mixed with 2 to 3 tablespoons cold water into drippings. Cook stirring until sauce thickens.
