Summary

Foster Farms Panko Crusted Chicken Breasts drizzled with an orange sauce. Substitute with pineapple or apricot jam for a different flavor on this dish. Serve with fluffy couscous for dinner in 30 minutes or less.

INGREDIENTS

2  Foster Farms Panko Crusted Chicken Breasts

2 teaspoons lemon pepper

  Orange Sauce:

1/4 cup orange marmalade

2 tablespoons fresh lemon juice

2 teaspoons finely minced fresh ginger (optional)

1 tablespoon olive oil

  Garnish:

  Sliced green onions or chives

DIRECTIONS

Preheat oven to 375°F.

Place chicken breasts on a baking sheet sprayed with non-stick cooking spray. Sprinkle both sides of breasts with lemon pepper. Bake about 16 to 20 minutes, or until chicken reaches an internal temperature of 165°F. Flip breasts halfway through cooking.

Meanwhile, combine orange marmalade, lemon juice, ginger and olive oil in a small microwave-safe container. Microwave in 10 second intervals until marmalade is just melted. Or heat ingredients together in a small pan.

To serve, drizzle chicken breasts with sauce and garnish.

Chef's Twist: Cut each breast into 10 pieces before cooking as above, baking for only about 14 minutes and turning pieces halfway through. When done, toss with the orange sauce to coat well and serve over couscous or steamed jasmine rice.
